Hand sliced whole side of cold peat smoked salmon

Our hand sliced cold peat smoked salmon is cured in a special marinade before being gently smoked over whisky soaked oak shavings and Applecross peat.  Our marinade is special as, in addition to the salt cure, we add Demerara sugar and Highland Park 12 years old single malt whisky which gives it a more robust flavour.

Serve as a starter canapé or main.
