This smoked salmon is absolutely magic. Often if you smell a side of smoked salmon, all you can smell is smoke. Not here; you smell salmon and the sea. The smoke adds a delicate note but it’s fish first, smoke after. And the texture! Not waxy but fresh, close-flaked, melt in the mouth. I don’t know how Derrick does it but long may he continue.

We order this every year. It has a really good smoke and we freeze it and slice as and when we're having a treat. It makes a great Christmas present.
